Strained vs. Filtered: Know the Difference
At Laurieville Farms, we believe honey should be enjoyed exactly as the bees made it. That's why our honey is merely strained, not filtered. Straining removes larger debris like wax cappings and stray bee parts, but leaves the beneficial trace pollen intact. Commercial filtering, on the other hand, forces honey through micro-filters under high pressure, removing all pollen and altering its natural profile.
The Cost of Heat
We never pasteurize or excessively heat our honey. Commercial packers often heat honey to high temperatures to prevent crystallization and make it easier to pump. However, this high heat kills the delicate, naturally occurring enzymes and destroys the unique floral flavors. By keeping our honey raw and gently warmed only when necessary for bottling, we preserve its full nutritional and medicinal value.
Understanding Crystallization
If your honey solidifies, don't throw it away! Crystallization is a natural process and a sign that you have purchased pure, raw honey. Because raw honey contains high levels of natural sugars (glucose and fructose) and trace pollen grains, it will eventually crystallize over time.
How to Decrystallize Your Honey
- Place your jar of honey in a bowl or pot.
- Fill the bowl with warm water (not boiling) until it reaches the level of the honey.
- Let the jar sit in the warm water bath. Gently stir the honey occasionally.
- Replace the warm water as it cools until the honey returns to a liquid state.
Never microwave raw honey, as it destroys the beneficial enzymes!
